Late Radicchio Tardivo I.G.P. is one of Italy’s most prized winter vegetables, known for its elegant spear shape, deep ruby-red leaves, and crisp, sweet-bitter flavor. Available only from November through early spring, this radicchio is produced through a unique, centuries-old process protected by the I.G.P. designation.
After harvest, the radicchio heads are placed in flowing spring water for about 15 days. This triggers a natural regrowth that gives Tardivo its signature crunchy white ribs, vibrant color, and refined taste. Only radicchio that has endured at least two natural frosts qualifies for the I.G.P. seal.
