This premium ham is trimmed, salted, seasoned with herbs and spices, then cold-smoked using non-resinous wood below 68°F. After smoking, it is aged in mountain air for 20 to 32 weeks, allowing the meat to develop its signature flavor, firm texture, and rosy color. Its mild smokiness and delicate herbal notes make Speck a versatile ingredient in both traditional and modern cuisine.
