Preparation Method
Prepare the white asparagus by removing around 1/2 inch from the woody end of each spear. Use a vegetable peeler to peel each asparagus almost to the tip. Cook the asparagus in boiling salted water for 6/8 minutes until tender and drain. Put a generous amount of butter in a pot and add the asparagus. Cook for 2 minutes. Grate over as much Parmigiano as you like and cook for another minute. Serve in a plate and finish with grated Parmigiano.
